What is Stevia and Why Do I Love It So Much ?

Stevia, most commonly known simply as sweet leaf, is the sweat plant originally harvested in South America, in the areas of Brazil and Paraguay. Recently, Stevia really got into the ‘western’ world and more and more people started using it recently. I’m one of them – and I can certainly say that it is my final bye-bye to table sugar in all its forms. By growing organic Stevia plant in my garden – I get to enjoy the sweetness of sugar without the debilitating effects of it!

If you’re someone suffering from very high blood sugar levels, you can certainly benefit the most from Stevia. It has no caloric value, no effect on insulin (although some people may suggest otherwise) and is practically perfect for anyone – especially for anyone fighting with diabetic monsters.

I have actually grown Stevia in my own garden for quite a while and am recommending a similar approach for those of you who have the skills, patience and physical space. You may get Stevia seeds cheaply from eBay or Amazon (which I recommend and endorse), but make sure you order them in time so that upon arrival the seeds are no more than 3 months away from their harvesting time. I had seeds shipped to me from Paraguay which ended up being ‘faulty’ due to this very same issue, so do not make my mistake.

Stevia side effects have been discussed in the past but I personally have never seen any statistically-strong correlation between this plant and any negative effect.

The funny thing about diets that work is that in order for weight to come off, you need to follow them.  The best diets that work are protein inspired diets.  Complex carboyhydrates such as anything made with white flour, sugar and or processed food raise your glycemic index,  hold onto water and make you bloated.  The best diets that work are The South Beach Diet and the Ducan diet.  Both of these diets start with an induction phase where you eat lean protein at every meal with limited vegetables.  Yes, you do need to keep track of the good carbs in the beginning, but after a couple of weeks, you incorporate more of the good carbs in your diet.  When you are happy with the weight you have lost, you follow a maintaence plan to keep it off.  The worst thing you can do is go back to your old ways of eating – it’s sure failure and a waste of your time if you do that. 

The easiest diet that works  if you don’t like to count carbs or calories, is simply eat nothing but lean protein and vegetables -period.  If you are dying for some sugar, berries, apples, and kiwi fruit are ok to eat since they are low in sugar.  It is difficult to start a diet like this  in the beginning, especially if you are used to eating junk food, but after the first few days you get use to it and in a couple of weeks you won’t want to eat differently because you will feel and look so good!

Protein:  poultry, eggs, fish, tofu, grassfed beef, lamb, beans

Vegetables:  Almost any vegetable except corn and white potatoes.  They both raise your glycemic index quickly.

If you are eating only protein and vegetables, use freely olive oil, coconut oil and butter.

Breakfast:  Saute asparagus with garlic, onion and zucchini.  When soft add 2 eggs and scramble.  Sprinkle with some sea salt and hot sauce if desired.

Lunch:  Large green salad with choice of vegetables topped with chicken or tuna.  Toss with a dressing made of fresh lemon juice, garlic and extra virgin olive oil. 

Dinner:  Protein of choice with a baked sweet potato. Small salad or choice of vegetable.

Snacks:  Apple with a tablespoon of almond butter, blueberries, celery with hummus, baked sweet potato chips.
